Description
The tenderloin is made up of two parts: the short loin (sirloin) and the sirloin (rump). It sits beneath the ribs next to the backbone. This muscle does little work so it is the most tender part of the beef, resulting in fantastic steaks like filet mignon and Chateaubriand. The tail part can be used for dishes such as beef stroganoff.
